Founded by Taylor Mortensen, a classically trained sommelier educated in Dijon, France—the heart of Burgundy—we carry forward centuries of winemaking tradition, but with a distinctly modern attitude. The name Say Bon! is a wink to the French phrase “C’est bon”—it’s good—and that’s exactly how we approach wine: it should taste good, feel good, and do good.

Our ethos is built around one guiding principle: bring depth without ego, and beauty without pressure.
